misc: use the "unstable" tag between releases

In addition the "latest" tag will be gone with the next stable release.

Going forward this is our versioning scheme:

- stable-XXXX: stable release
- unstable: daily unstable rolling release
- unstable-XXXX-YY: daily unstable release
